I purchased a couple of B5 boxes off amazon and I’m having trouble having it connect to the internet and use an IPTV service. Has anyone experienced this before and what did you do to fix it?

Hardwired or WiFi ?  If it is WiFi, it could be a compatibility issue with your router.

I have a B5 and setup 2 others for a friend, and no issues.  

Is it just your IPTV ?  Does Youtube work ?

It’s WiFi. The YouTube app wasn’t on the device and I can’t figure out how to access additional apps to install. I have the same issue with both devices and both purchased from Amazon. 
 

One curious thing is the date/time on the devices starts up as May 2024 which I found weird. It says it connects to the WiFi successfully but I’m not actually getting and internet connection that I can tell.

Something is obviously not correct.   Youtube is typically installed automatically upon first power up.  And even updated upon the first firmware update the box will take.  

I strongly recommend you do a full hard factory reset on the box before trying to configure it further.  Not sure what state that box was in from the seller you ordered it from.

The procedure is same as in the video below (even though video is for a an older model).
